Having studied at Michigan State University and graduated with a Bachelor of Science in Hotel, Motel and Restaurant Management, Paul Leongas went on to become a manager of several successful businesses including The Curragh traditional Irish pub which has several separate locations across Illinois and Michigan.

Paul became the manager of The Curragh alongside his sisters Lydia & Sophia over two decades ago and thanks to their combined expertise, the pub went from strength to strength thanks to the authentic Irish cuisine on offer and the fantastic array of draft beers on tap. In fact, the concept proved to be so popular that more branches were opened so that more people than ever before could enjoy the gourmet taste of Ireland.

More recently, Paul & his family decided to branch out in a different direction, and turned his attention to the cuisine South of the border. As the manager of Que Onda in Chicago’s Edison Park, Paul has created a delicious Mexican taco concept that delights suburban diners who love a touch of spice! At the head of a passionate team, he takes pride in the warm welcome that the restaurant offers and is keen to make every bite count!
